My Food Mentality | Fav Vegetarian Meals (For Students)

So I mentioned in my Project 2017 April Update that I was giving up meat for May, which means that May was the perfect opportunity to post some quick meat-free student meal ideas!  So, without further ado, here’s a list of some of my favourite veggie meals so far…

Soy Burgers with Sweet Potato & Carrot Mash and Gravy

I’ve been testing out loads of “meat substitutes” since this little experiment and I have to say the soy burgers I found in ASDA are the best one I’ve found so far!  They really mirror the taste and texture of real burgers and I’ll probably still buy these when I go back to eating meat.  To put this together all you need is:

  • 1 Sweet Potato
  • 1 Carrot
  • 1 Onion (for gravy)
  • 5/6 small mushrooms (for gravy)
  • 1 Soy Burger (I got the mature cheese and tomato ones)
  • and some instant gravy (I use Bisto)

£1.62 per serving (£5.68 initial buy)

Veggie Couscous

I’m not a big rice or grain person, so if I was going to eat couscous, it had to be tasty.  I toyed around with a bunch of ingredients until I found a couscous that I actually found was edible…  I threw in a bunch of veggies that I liked, which made it more filling, and added a tonne of garlic (because honestly I could eat garlic in just about everything), but you could essentially make this any way that works for you…

  • Couscous
  • 1 Tomato (chopped)
  • 2 cloves garlic
  • 5/6 mushrooms (chopped)
  • 5/6 black olives (chopped)
  • Spinach

Quick Vegan Sausage Casserole

Going vegetarian wasn’t as hard as I thought because when I’m at uni there’s not that much meat in my diet anyway (meat is very expensive) but Linda McCartney sausages were a real game changer (and they also happen to be suitable for vegans).  I whacked 2 of these in the oven while I fried up an onion, a bunch of veg, threw in some baked beans, Worcester sauce, the chopped up sausages (once they were cooked) and served with some rice, and it made for an extremely filling meal…

  • Linda McCartney sausages
  • Onion
  • 2 Salad tomatoes
  • 5/6 mushrooms
  • Spinach
  • Green beans/peas (They’re interchangeable)
  • 1 Sweet Pepper
  • Baked beans
  • Brown Rice

£2.74 per serving (£7.93 Initial buy)

Being vegetarian has been pretty fun so far… As I mentioned in my boredom post I needed a change, and it’s given me a chance to try some new recipes and switch up my diet.

    Three really yummy sounding recipes here Jasmine, I love the sound of the quick vegan sausage casserole, so will definitely have to try that one out as I love the Linda McCartney sausages so I reckon I’ll like that one, and I love brown rice, it’s my favourite, so any recipe where that’s used gets a thumbs up from me! – Tasha
